I have more than one occasion heard of people asking me to give Ryo Sushi a try, more so of its reasonable and decent sushi so I finally made a trip down one day. The lunch menu is split into $38 (9-pc sushi), $68 (12-pc sushi) and $98 uni menu and a deposit would need to be paid to secure your reservations. I thought hard and long whether to go for the $68 or the $98 but decided to go for the mid-tier in the end. And so my meal consists of edamame (which I’m not a fan of), hijiki seaweed (which I’m also not a fan of), onsen egg, 12 pc sushi, hand roll, mini chirashi don and a soup. The door at Ryo opened at 1145am sharp for their first seating and diners would be led to their seats. The chefs would then serve you your appetisers before prepping their sashimi infront of you
Slightly different here – the fish slices are all sliced together at once rather than piece by piece, probably for better management of handling the lunch crowd

In all honesty, the concept here is different. The sushi served here is more contemporary so they try to incorporate variables to add on to what you usually see in traditional sushi restaurants. I’m actually open to chefs using their own ideas and innovation to create something unique. But I feel like the fundamentals need to be there. Like for example, the temperature of the rice was too high, the texture of the rice was a little too mushy, the rice actually broke when I took the sushi up, I couldn’t chew the fish properly cos of the ‘vein’. I felt like these things say a lot about the skills of the chef and I was rather disappointed and I would like to add the design of the plate is downright distracting. Using a simple elegant shiny black plate would be so much better

Being a self-taught chef, I think it is great he has came this far but I was just confused by this entire meal. And seriously, aburi sushi?! I really didn’t expect it here. To me, sushi – you either go cheap or all the way expensive. Being somewhere in the middle is just downright not satisfying. It’s like the satisfaction of enjoying each piece of art is just not there. And you could probably guess if I’m still returning
