Latido – One of A Kind Colombian Cuisine in Singapore

The friend wanted to check out Latido so we decided to have our dinner there. Focusing on Latin American culture, Chef Fernando brings out his own touch of fun and vibrancy in his cuisine. Also, it’s not so common to find Colombian restaurants in Singapore so we were quite looking forward to dinner

We were seated at the bar where you can watch everything in action. And also, it was easier to grab the staff’s attention cos the restaurant was just full and busy the entire night

Signature Homemade Rye Bread $8

The friend asked if I wanted bread. I said no initially then I looked at the bread being served to the couple beside us and I changed my mind. Ha. And I was glad I give this bread a try. It has a very nice flavour to it with the fermented soya sauce so it tasted a little sweet yet savoury at the same time. And I liked how you can taste the fragrance of the rye in the bread

Chicken Hearts, Andes Potato, Red Wine, Yolk $22

I liked the tender hearts and I thought it went well with the yolk for that creamy texture. I don’t think the potato balls were necessary but it was done pretty well

And the staffs bringing out the suckling pig which we will be eating later on

Sawara Ceviche, Leche de Tigre, Lime Pearls $22

Fresh and easy-to-eat appetiser, I thought it was an interesting to serve it kueh pie tee style. Yet the cup texture and flavours were slightly different. It was slightly sweeter and thicker in texture though generally I thought this was pretty decent

Sweet Corn Cake, Pork Jowl, Egg $26

I really liked the corn bread. It was thick enough to be bread-like yet thin enough so it’s not too gelat. You can taste the sweetness of the corn, but yet savoury at the same time. And there were layers with the addition of the pork jowl, finished off with the creaminess of the yolk. It was such a well-thought and nicely executed dish

Cuttlefish, Spicy Sausage, Chimichurri $36

The highlight of this dish was the sauce. The friend wiped off every single bit of the sauce. We thought the cuttlefish was a little chewy but when we saw the kitchen simply just torched the cuttlefish, we could understand where the chewiness is from. They wanted to retain the freshness of the ingredients but yet let us enjoy all the flavours together

Lobster, Avocado, Sweet Corn, Potato Soup $50

The highlight of this meal was this soup. The friend said she would forever remember this flavour. I love the cook on the lobster. It was cooked on the outside but super tender on the inside. You could taste the lightly torched flavour on the lobster but yet abundance sweetness at the same time. The density of the potato soup was just right so it wasn’t overly thick and you could taste the fragrance of the corn at the same time. It has such complex flavour but yet simple at the same time. This soup was really good

Suckling Pig, Pickled Chilli $42 per 100g

After having the soup, the suckling pig lost its shine. lol. What I found the most impressive about this dish was the skin. Else everything else I felt was just okay but nothing to rave about

Ending off with a birthday dessert

I thought the food left an impression. Though they might need to add one more ground staff cos they were clearly understaffed for such busy service. Overheard a customer complained service was bad. I could understand why. They were so busy it was just hard to grab their attention and even for us seated at the bar, we had to wait a bit. I don’t think they had bad service, they just need one more staff. Overall, it was a good meal and could be one to consider if you like some diversity in your cuisine or if you are looking to try something different
