Was determined to try somewhere different for my sushi fix and somehow this came up on my feed. So I decided to give it a try. Sushi Katori, headed by head chef Ryuta Katori, is located at Tanjong Pagar road and has been around for 4 years

I was there for dinner on a Friday night, served by sous chef Kato Hiroyuki and it was a full house that evening. I took the omakase nigiri menu, priced $320++ person, consisting of seasonal starter, 15 pieces of sushi, appetiser, cooked dish, miso soup and dessert

Starting with a soup to warm the stomach, cooked with salmon bones, white miso, sake. This tasted like ABC soup. It has both the sweetness + slight sourness to it, yet balanced and hearty. Chef said it’s a good 解酒汤 if you had too much of a drink

Kawahagi
Shari was good. I liked the texture of the rice. The kawahagi also had a nice texture and crunch. I say the first piece was pretty good to start with

Akami
The sweetness of the akami and yuzu really came out on this, flavours changing with every bite

Aji
The spring onion and ginger was really evident, so strong it somewhat tasted like garlic, but yet you can still taste the freshness of the aji

Chutoro
It’s decent enough, though not very wow

Seasonal Appetisers – Japanese Simmered Fish, Daizuni beans w Konjac Jelly, Mountain Yam Tofu with Tiger Prawn

The mountain yam tofu was smooth and sweet and went nicely with the broth. The wasabi gave a little kick and the tiger prawn rounded the dish with a nice crunch. The beans got a nutty, earthy taste to it and konjac jelly complemented it well. The wakasaki nanban was really good. It was abit crunchy yet soft as well. And the fish was really flavourful with the peppers and sauce

Green Bean Fish
This fish has a nice chewy texture to it and you can taste the sweetness of the fish and vinegar of the rice

Hokigai
Nice crunchy texture, very sweet as well

Otoro

Kohada
Cos I said I liked my silver fish, Hiro-san served Kohada. He heaved a sigh of relief when I said it’s good. I legit laughed. Got so stress not? lol

Taro Shirako Age, Japanese Parsley
The shirako was very plump but I thought the batter can be lighter. The broth itself was better than the shirako

Ankimo with Monaka
All sorts of flavour here – creaminess of the ankimo, wasabi and texture of the pickles. It’s like a refreshing break from the sushi

Kinmedai
This was.. very normal

Shima Aji
This shima aji was surprisingly good. It had a plump chewy texture and you could taste the sweetness as you chew into it

Negitoro w Caviar
Negitoro was good though I don’t think the caviar was needed necessarily

Aburi Tuna Cheek
This was done pretty well. You could taste the oiliness, fattiness and sweetness of the tuna together with a touch of vinegar from the rice

Hassaku w Jelly as palate cleanser

Botan Ebi
A very typical botan ebi

Uni Rice Bowl
And a very typical bafun uni with ikura rice bowl

White Miso, Mushroom, Tofu
By the time I reached the soup, I was really full

Tamago
I really liked their version of tamago here. It’s a little melty on the top yet soft and custardy in the middle

Dessert
It has been a pretty good experience at Sushi Katori. I generally thought the pieces here were quite decent and the sushi was quite balanced. Given I was served by the sous chef and the quality was pretty acceptable, I looked forward to what the head chef has to bring the next time I returned
