Sushi Dan had their second opening at Parkway Parade without much fanfare. The friend and I made it down in hoping to catch Sato-san. Well, I kinda caught him from afar and then he left shortly after. There wasn’t a long queue thankfully so we didn’t really wait particularly long

I got the Jiyu set, priced $34.90 which you can select your choice of 7 nigiri and it comes with negitoro handroll and miso soup

The gari was surprisingly not bad with a tinge of sweetness, balanced with the right acidity

Akaebi

The shari has traits of Sato-san’s recipe though a little lighter on the vinegar. But the soy was a little much for the first piece

Hamachi

Hamachi was really good. You can taste the buttery flavour with a semi soft texture of the fish

Kohada

Kohada was pretty decent too, with a slight fishiness without being too overwhelming

Hokkigai

Soft and chewy hokkigai with a lingering sweetness

Aburi Anago, Aburi Engawa, Aburi Shime Saba

Anago was rather normal but I liked the engawa

Saba had an umami taste to it. Slightly torched to give a slight oiliness and smokiness. It goes well with the rice

Negitoro Handroll

I honestly thought the handroll was about little too big. I liked the sweetness of the negitoro but would have preferred a firmer texture to it

Chawanmushi $3.99

I ordered an extra chawanmushi to wrap up the meal. Quite normal, nothing to rave about

For the price point, I have to say the meal at Sushi Dan was really quite decent. Also, the dining experience was much more enjoyable than other sushi joints because kids below 12 are not allowed to be seated at the counter so it was mostly adults only. We were left pretty impressed by its quality for the price we paid though I have to emphasise that it was their first day of opening and Sato-san was present (but not making sushi). I was telling the friend if they keep their standard consistent, they could probably survive in the long run. Now it made me feel like trying the Raffles City outlet to see how the quality was and if it’s also any good as well
