Nomada – Creative Spanish Food by Ex-Binomio Chef

We went to check out Nomada for my birthday. This new place serves modern Spanish cuisine and is helmed by Chef Gonzalo Landin who used to be from Binomio. The main dining area isn’t big and even though tables were aplenty but each table space was quite small in my opinion. We went in as a group of 6 and felt like it was a little too cozy for comfort. But they have a nice open kitchen for those that are seated infront for a full view which you get to watch the commotion as it unfolds

And oh, there’s quite an entrance if you are celebrating your birthday there 🙂

Oxtail Croquettes (4pcs) $16

I enjoyed how they made the oxtail into bite-size form, like you can really taste the hearty and rich oxtail stew in it. Though I felt like the croquettes were a little underwhelming in my opinion. Like they were okay.. I guess

Chicken Liver Pate w Country Bread $24

The bread was really good. So good we ordered a second portion. It was served warm and soft and goes well with butter (well we requested for butter). I thought the pate was quite delicious, whole the green apple jelly was abit questionable. The friend didn’t quite like soft texture on top the pate. I thought the flavour just didn’t work together

Sautéed Wild Mushrooms & Egg Yolk $18

A good plate of mushrooms, mixed with the runny yolk to give a creamy texture

Braised Short Ribs (200g) w Cauliflower $34

The short ribs were delicious. We should have ordered the bigger portion. I recommend to give this a go

Grilled Octopus, Spelt, Covage Emulsion, Bonito Broth $36

I really liked the execution on the octopus and how it went with the barley rice. The friends find it a. little salty but I thought it was alright (sorry I have a high tolerance for salt)

Spanish Suckling Pig w Apple Compote $89

The skin was good, the protein done well though it does have a strong porky taste towards the end. Hence, the rocket leaves to pair them along (that is if you are a fan of them)

Red Mullet Rice $68

I thought the rice was done really well. Infused with the broth, it was rich and flavourful. Wished they could have just give us some lemon to squeeze on the fish else there wasn’t much to complain about the execution on the fish

And just some desserts to end the evening. I would vote the pistachio over the chocolate

Overall, food here was pretty decent. The friend found the flavours are a little on the heavier side but I thought they were alright. Just different palate for everyone I guess. It’s still worth checking out if you are sick of the usual tapas that you usually have
